Bring water to a boil, add rice and salt, stir and simmer, covered for 45 minutes. Do not stir again. 45 Minutes
While rice is cooking, blend almonds, parsley, garlic, lemon juice, olive oil and pepper in a food processor.
Remove rice from heat and let sit for another 10 minutes; then remove cover and allow to cool. 10 Minutes
When rice is cool, stir with nut mixture.
Garnish with cucumber if desired.
