Yellow Rice

 2 cups low-sodium chicken broth
 1 small onion, finely chopped
 2 tsp olive oil
 1 clove garlic, minced
 ½ tsp turmeric
 1 cup long-grain brown rice (uncooked)

In a 2-quart saucepan over low heat, sauté onions in oil until tender, about 5 minutes.

Add the garlic and sauté 1 minute.

Stir in turmeric, then rice. Add stock. Bring to a boil, cover, and simmer 45 minutes over low heat or until rice is tender and all liquid is absorbed. Do not stir. 45 Minutes
